Rare Japanese White Jelly Mushroom 

Also known as the White Wood Ear Mushroom, this soft, pure-white silhouette of this delicate mushroom evokes the beauty of radiant skin — a true forest jewel brimming with nutrition.


What Is Japanese White Jelly Mushroom?

This variety, called Shiro-Arage Kikurage, is the white strain of the wood ear mushroom.
Its harvest volume is only one-third that of common black wood ear, and cultivation demands far more time and care.
For that reason, very few farms in Japan produce it domestically.

Nicknamed the “edible beauty essence,” white jelly mushroom is plump, mildly sweet, and wonderfully tender.

It enhances any dish — from stir-fries and soups to salads, vinegared sides, and even chilled desserts.

At our farm, we carefully select only the purest white mushrooms for processing.
Because they are naturally concentrated through drying, they may appear slightly yellowish — but once rehydrated, they return to a beautiful, soft white color.

※ Note: this Japanese white jelly mushroom is a different variety from the “Silver Ear (Tremella)” commonly found in China or Taiwan.

Traditional Drying Process

After harvesting, stems are trimmed and the mushrooms are gently washed,
then sun-dried for 2–3 days — a method that naturally boosts nutrients such as Vitamin D.

Before cooking, try placing the dried mushrooms under sunlight for 5–10 minutes — it further increases their nutritional value! 


How to Enjoy

Rehydration:

  1. Pour boiling water over the mushrooms — ready in 20–25 minutes.
